Get That Blender Away From My Daiquiri

Today's guest blog is from Mark Woods a.k.a. Tikitender. Mark is Florida's 4-time Favorite Bartender, a social media maven, and principal bartender at The Golden Lion Cafe in Flagler Beach, Fla. Also, he rocks.

I once read about a bar owner who had a simple interview process for potential employees. He'd simply say, "Go behind the bar and make me a martini." If the applicant reached for a bottle of vodka, the interview was over.

Simply put, a martini is gin and vermouth; nothing more, nothing less. I'm not saying that a vodka martini isn't a legitimate cocktail. Let's just call it what it is. The daiquiri can cause similar confusion.  

A daiquiri is a daiquiri. A frozen strawberry daiquiri is a frozen strawberry daiquiri. A strawberry daiquiri prepared with fresh strawberries is a Delicious Treat. It's also a rare find. Most bars, including my home bar, use strawberry syrup. Frozen daiquiris made with this super sweet mixture are actually quite popular. (It must be the American sweet tooth at work.)

Unfortunately, such shortcuts take all creativity away from the process. If you want the real deal, try your hand (or challenge your bartender) at these two takes on the classic (see original post here):

Much easier to make than it is to spell, the Classic Daiquiri can be a challenge to those who haven't taken the time to learn the history of cocktails. "Created" in the early 1900s, this classic cocktail is actually very similar to the grog that British sailors drank.

*Spoiler Alert!* A Daiquiri is NOT a frozen drink unless it is ordered as such.

The Classic Daiquiri, a favorite of John F. Kennedy and Ernest Hemingway, is believed to have been created near Santiago, Cuba.

Classic Daiquiri

8 parts white rum
2 parts lime juice
1 part simple syrup

Combine all ingredients in a shaker half-filled with ice. Shake vigorously. Strain into a chilled cocktail glass. Dream of the days when Cuba will be open for tourism.


Daiquiri Old Style

Fill a tall glass with cracked ice. Pour a teaspoon of sugar over the ice. Add the juice of one or two limes to taste. (Yes, I mean freshly squeezed limes.) Pour two or three ounces of rum over the ice. Stir with a long-handled spoon until the drink is thoroughly chilled. Enjoy.

Don't even look at the blender.

As you can read, the Classic Daiquiri is a far cry from today's processed  sugary mess. Much like the the Classic Margarita, which has given way to artificial sour mix rather than a squeeze of fresh lemon, the Daiquiri has become over-sized, over-sugared, and over-priced. I can't imagine Papa Hemingway waxing poetic about a noisy blender.

Featured Dish: Cajun Pasta Ettouffe

It's not very often that Rum Barrel Chef Pat Dunn lets his secrets out of the kitchen, but we're sharing this one exclusively with our fans and loyal readers.

May we introduce...

Cajun Pasta Ettouffe 
Yield: One Portion

Oil, as needed
4 oz. Sliced Andouille Sausage
4 oz. Rock Shrimp
7 oz. Cooked Penne Pasta
7 oz. Ettouffe Cream Sauce 
t.t. Parm Cheese   
t.t. Salt
t.t Pepper

Method: 

1. Sweat Andouille Sausage in oil for 3 mins.
2. Add Rock Shrimp and cook ½ way.
3. Add Penne Pasta and mix.
4. Deglaze pan with 7 oz. Etouffe Cream Sauce and mix.
5. Place in serving bowl and garnish with Parmesan Cheese.

Not sure how to make the Cream Sauce? That's OK. We've got that, too!

Etouffe Cream Sauce

12 oz. Blended Oil
10.5 oz. Red Bell Peppers
14 oz. Diced Celery
16 oz. Yellow Onion
2.25 oz. Chopped Garlic
.5 oz Black Pepper
.15 oz Cayenne Pepper
.25 Cajun Seasoning
8 oz. AP Flour
5 oz. Green onion
1 oz. Chopped Cilantro
3 #’s Chopped Tomatoes with juice
4 oz. Lobster Base
1 qt. Water
4 oz Sherry
8 oz White Wine
1 qt Heavy Cream
.5 oz Tabasco
t.t Salt
t.t Pepper

Method:

  1. Heat Oil. Once oil is hot add: peppers, celery, onion and garlic. Sweat on low heat for 5 mins.
  2. Add Seasonings
  3. Add Flour and mix well
  4. Add tomatoes, lobster base, water, sherry, white wine and heavy cream and bring to a boil.
  5. When sauce has thickened turn off heat.
  6. Finish with sliced scallion, cilantro and Tabasco.

Rum Barrel Featured Artist: Tim Charron

Tim Charron's entry into the entertainment field started as a teen in Warwick, R.I., singing, writing and performing in rock bands. His career continued as a pop rock artist in Miami and then to Nashville, Tenn., where he’s now based.

Tim spends his time touring the country, hence the moniker: Rock & Roll Gypsy. He has opened for country music's 10-time platinum selling artist Clint Black; Shooter Jennings, country music and Southern Rock singer/songwriter; performed with members of Brooks & Dunn, and on many a stage and at festivals from California to Tennessee.

“When I tour, I stay with local friends, fans or I camp and get immersed in the local culture: food, art, sports, people,” Charron told us.

Tim recently stayed at a hippie commune in Venice Beach, Calif., and on a houseboat in Key West, Fla. He’s an avid volleyball player and plays at beaches all over the country on his tours.  He also recently began surfing in California.

“Many times, I’ll write songs that reflect those places,” Charron said.

Like a lustful ballad inspired by a stormy day on Miami Beach ("Desire"), meeting a girl at the ocean's edge in Costa Rica ("Tequila Talk") and “Roadside Road”, an ode to life on the road, touring, and taking the road less traveled. His music reflects his working-class upbringing and his nomadic, jet set lifestyle, he said.

Tim's music and shows are heavily influenced by the likes of Kenny Chesney, Keith Urban, John Mellencamp, Sheryl Crow, and Jack Johnson.

Tim Charron performs on The Rum Barrel Quarter Deck this month on March 18th and 31st at 7 p.m.

Allow us to re-introduce *drumroll* Chef Patrick Dunn

We were lucky enough last year to lure Chef Patrick Dunn to captain the Rum Barrel kitchen after he'd made a name for himself as the protege of Iron Chef Jose Garces at his Latin-Asian Chifa Restaurant in Philadelphia, Pa.

But here's some stuff you didn't know about this awesome chef toiling behind the scenes to perfect our menu of fresh local seafood and creative entrees.

Dunn started his restaurant career as a teenage dishwasher at a small Philadelphia restaurant before working his way up to line cook.

“I just developed a passion and a love for cooking at a young age,” said Dunn, 29.

A 2003 graduate of The Culinary Institute of America in Hyde Park, New York, Dunn was mentored by Garces, one of the nation’s most gifted chefs, with six restaurants in Philadelphia and Chicago and the title of The Next Iron Chef.

Dunn honed his culinary experience as Chef de Cuisine at Ocean Key Resort’s Hot Tin Roof and Sous Chef at Carmine’s in Key West. He'd always liked hanging out at the Rum Barrel when he lived in Key West, so working there was just too cool for school, Dunn said.

Since starting at the RB, Dunn has revamped the menu and taken the 17 century-themed pirate hangout to new culinary heights. Tastebuds watering for more? Check out the RB's menu with Dunn's special touch.

This ain't no ordinary beer

Dogfish Head 90 Minute Imperial I.P.A.

Beer with us for a moment while we brag about the beastly cold Dogfish Head 90 Minute Imperial I.P.A.s available right out the cooler at the Rum Barrel.

As Dogfish's first continually-hopped beer, it's been called the best IPA in America by Esquire Magazine. What does continually-hopped mean? It's a method that allows for a pungent, but not crushing hop flavor, during the boil. What does that mean? It tastes great!

They also use this appropriately named device called the 'Me So Hoppy' to dry-hop the beer during conditioning. Check out the vid. Then stop by for a brew!

Rum Barrel Featured Artist: Michelle Dravis


"If I don't know it, I'll play something that reminds me of it."
Michelle Dravis has been singing every night since the day she was born. Not long after she told her teachers that she wanted to be a Rock Star, her mom, a professional concert violinist, got her a guitar. And she's come a long way, baby.

Dravis is an energetic diva, who owns any stage she's on. With sweet melodic to upbeat and fun, her humorous presence give a rare vibrancy each show.

Dravis takes listeners on an acoustic adventure with nothing but her unmistakable voice and guitar. And she can also  rock the dance floor, powerfully leading bands, covering Rock, Blues, Alternative, Reggae favorites, and Country classics blended with funky Pop.

She's been known, without warning, to sizzle a full house with a tune like Aretha Franklin's "Respect", driving it like she stole it with a voice larger than a 30-piece orchestra.
